Don de la Nature (hereafter "Don de la Nature") opened last July with the concept of communicating to society the "richness of food culture" supported by producers who nurture safe, secure, and delicious ingredients through a Western-style restaurant in town that is accessible to everyone on a daily basis.
We pay careful attention to all the ingredients we serve at the restaurant, but first let me tell you about the main ingredient, pork.
Kumamoto's "Gensui Pork" used in "Don de la Nature" grows up drinking plenty of natural water every day, playing in the mud, and receiving plenty of minerals and microorganisms contained in nuts, natural soil, and roots.
The lean meat is juicy, moist and supple. It has no odor, is full of flavor and nutrients, and contains about half the fat of ordinary pork. We grow up together with nature. It is a rare breed of pig that has grown up in a world where people take care of such things that were commonplace in the past.

Vegetables grown organically or by special cultivation are purchased from farmers throughout Japan. They are grown without relying on chemical fertilizers or pesticides, and are grown to inherit the power of the land and the wisdom of their creators, giving them a strong flavor with a character unique to the area.
The rice is a fantastic native variety that was once known as "Kame-no-o in the East and Asahi in the West," and was most loved by the Japanese people. It is a rare native variety, the ancestor of Koshihikari and Sasanishiki, grown through natural cultivation and seed transmission.
