The store is located in the Gosho Minami area of Kyoto. The concept of the restaurant is “brewing,” meaning brewing and creating an atmosphere in a place where the culture of fermentation is still alive.

The store will feature a salon where you can pick up Osage products, a counter area where you can enjoy fermentation-themed food, a Kyoto-only workshop by home fragrance perfume specialist "kako", and a gallery space curated by "Osage". In those days, doctors working for feudal lords and shoguns were called “osaji” (meaning "spoon" in Japanese) in reference to the way they used a spoon to prepare medicines.
