On July 16 this year, TEATON, a members-only coffee shop serving tea, opened in a location adjacent to Phaeton. The idea was conceived 4 or 5 years ago. Mr. Sakaya was introduced to Nepalese black tea by Susumu Onishi, the representative of Teteria, a wholesale tea distributor. Since then, he has fallen in love with single tea plantation leaf tea, and his love for tea has grown to such an extent that he has given up drinking 10 cups of coffee a day. I started the store to share this wonderful experience. In other words, the opening of Teton was not a fashion approach.
They carefully select teas from India, Sri Lanka, and Nepal, with tea leaves that change with the seasons. All of the sweets that are essential for tea time are gluten-free, lactose-free, and white-sugar-free. The carrot cake, weekend citron, chiffon cake, and almond milk pudding are all prepared by pastry chef Kou Tsurumi, with recipes created by his long-time friend, and mastered over the course of several months by the store staff.
Tea is brewed in the tea room located in the back of the restaurant. In addition to hot and iced teas, a variety of teas are available, including milk and herbal teas .
The sweets include the almond milk pudding, tiramisu, torta caprese, and carrot cake shown in the photo, as well as the Weekend Citron, Mont Blanc, congolais, and fenris crisps. All are gluten-free, lactose-free, and white-sugar-free.
A Japanese paper door at the back of the restaurant leads to a "jet-black tea room made of charcoal plaster, terrazzo, and washi," and tea is served in the room lit by a skylight. .
