After training at a number of famous coffee shops, he went abroad to improve his knowledge and experience in coffee, and in June 2016, he opened the coffee shop "Dear All" in Sasazuka, Tokyo, with his friend since junior high school, Yutaro Hoshi, where he is currently working as a barista.

I felt a great deal of empathy for their attitude of valuing traditional Japanese industry and culture.

It's been a long time since you wore Converse sneakers.

In fact, it has probably been a while since I have worn sneakers. When I was a student, I used to wear "All Star HI" shoes with the long laces tied around my ankle, but since I started this job, I mainly wear leather shoes because they get dirty easily. I used to wear side gore boots, which many baristas in other countries love to wear, and I often imitated them, but recently I have been wearing sneakers more and more in the store.

The "Jack Purcell" model you are wearing this time uses Kurashiki Canvas, a traditional material that has long been produced in Kurashiki, Okayama Prefecture, as the upper material, and is equipped with a high-density React HD cup insole for an updated level of comfort.

I don't remember "Jack Purcell" being this comfortable. The comfort is outstanding. We are on our feet all the time, so we appreciate the cushioning. We also use domestically made drippers, grinders, and tableware in our store, and our attitude of valuing traditional industry and culture is close to our love of Japanese craftsmanship, so we felt a great deal of sympathy for them.

What is the point of today's coordination?

I usually wear black for my clothes, so I brought white for my feet to give a light impression. This is a color I avoid at work because it gets dirty, so it is refreshing to wear them in the store like this. When summer approaches, it will be nice and refreshing to match a short-sleeved shirt with denim pants. Denim is cool even when it gets dirty, as it adds to the look. The same goes for the canvas material used in the Jack Purcell. I would love to wear it and enjoy its texture.

Dear All is a popular coffee shop loved by the locals in Sasazuka.

Our dedication is to always provide our customers with coffee that we think tastes great. To achieve this, we believe that coffee roasting should be left to professional coffee roasters, rather than to our baristas who roast the coffee themselves. For this reason, we use beans imported from "Prologue Coffee Bar" and "Coffee Collective" in Copenhagen, Denmark, and we always have several types of drip coffee to choose from.

If you had to sum up the ideal coffee flavor you are aiming for in one word, how would you describe it?

If it is not bitter, I think anyone can drink it. Ideally, I would like it to have a "round and sweet taste" so that even people who could not drink coffee can enjoy it. I make each cup of coffee carefully so that customers who drink it will say it tastes good. The name of our store, "Dear All," expresses our desire to be a coffee shop for everyone.
