Sake is the best tool for that, don't you think? I think this is something I can do because I am the one who makes sake and runs the place where people drink sake.

Segi:Ideally, I would like to be self-sufficient 100%. I aim to make my sake entirely from ingredients I grow myself. The herbs available in each season are different, and I hope to bring out the individuality of the land and myself. . At first, it's a way of borrowing the methods and strengths of the people I respect around me, and then changing them to my own way. I think it could be categorized as a craft gin, but I want to keep it non-genre, and it doesn't have to be called a gin. I want to value good taste. Good spirits, good drinks, that's fine.
