An encounter between Kyoto's Suba and Tokyo's Wirtos. . It will be born in Shibuya as Buies, with Yusuke Seki working on the space.

It is often said that soba is to the east and udon to the west, but recently there is a soba restaurant that has become a hot topic in the Kansai region. That is "suba" (soba). Inside the restaurant, architect Yusuke Seki has placed an artwork by Tomonari Hashimoto in the center of the restaurant, which is used as a counter for eating soba noodles with Kansai-style broth.

In Tokyo, the restaurant's soba is also available at Yose in Yoyogi, but this is the first time it has opened a branch in Tokyo. Finally, it will be available in Shibuya as well. Moreover, it is conveniently located just a 3-minute walk from Shibuya Station. This time, the restaurant will be located on two floors in collaboration with VIRTUS, a wine store that has branches in Jingumae and Jiyugaoka. The name of the store is "VIRTUS VS," and it will be located on the first floor as "SUBA VS" and "VIRTUS VS.

Mr. Seki also worked on this restaurant. He tilted the floor this time in order to link it with "Suba" in Kyoto. The new flooring technique, which was also used in "Sakai Aoyama" by Mr. Seki, the walls made of wood used to solidify the counter, and the way the shadows appear, all show the unique attention to detail that he paid this time as well.

And just like the Kyoto store, the bowls are originally produced with "NOTA_SHOP," a store and ceramics factory in Shiga Prefecture. The bowls are remade from the "Soyashi Susuki Donburi Bowl," the most popular bowl used at stand-up buckwheat noodle restaurants in Japan, and are a slightly pinkish beige color for the Shibuya store.

On the first floor, there are regular soba noodles, as well as "cold-aged tomato soba⻨," "shijimi clam and mandarin oil from Lake Shinji, Shimane Prefecture," and the "Toriten Mao Tse-Tung Spice," which is only available in Shibuya. At this restaurant, you can also enjoy soba mae and dashiwari with wine, and you can also enjoy wine on the 2nd floor by the corner.

The second floor is a wine store and wine bar. The cellar features over 1,000 varieties of natural and Japanese wines, and wine dispensers offer tastings of more than 48 wines of your choice at any given time. In addition, the wine is available in small quantities, although bottles must be purchased separately. This is designed for a wider range of enjoyment.

To celebrate the opening, those who purchase ¥25,000 or more of wine will receive a free bottle of "Mikaeriburando Garu", originally brewed by "Grape Republic" in Yamagata. The offer will end as soon as it runs out, so be quick.

By the way, they are holding a 52-hour event until 4:00 p.m. on Sunday, September 8, with the first floor open for the entire 52 hours and the second floor having grab bags and raffles, so either way, it should be interesting to get there early!
