What is the absolute value of this restaurant?
Biryani House" is an ideal place to make delicious biryani, not a business, right? Then, what was your motivation for starting the restaurant?
I stopped serving biryani at "Biryani House" for a while and focused on working at "Garam Masala," but I got depressed... . . it was only then that I realized the potential of opening a restaurant when someone recommended me to do so. Until then, I thought that the best way to make biryani was to open a "biryani house," but I thought that if I could make delicious biryani, please my customers, and make a living, that would be the ideal situation for me.
. So that realization led you to crowdfunding.
When I think about it now, it's black history (laughs), but when I was a college student, I was a very conscious student who was determined to start a business. I tried many things with a high level of awareness, but in the end I felt I had nothing, and I always wanted to obtain something of unshakable value. . Apart from that, though, I've always eaten biryani simply because I liked it.
As I later realized, deliciousness is an absolute value, and if we can create something that tastes good no matter where people eat it, it will be of great value. I think that the crowdfunding was the result of our efforts to create that value through research and study, and I believe that those who came to eat at Biryani House, even once, felt that value. They wrote down their impressions of the food, and I think that people who saw and heard them understood that this was the real thing.
I think there is more to a restaurant than just the food itself, but in this restaurant, the delicious biryani is the one and only value.
The only value in me is to make a good biryani, right? I will do anything for that. I think it means that I have finally realized that value with twists and turns.
. I see. By the way, have any real Indians ever had biryani here?
It's a little different from what they eat back home, and it's complicated because of the customary taste I mentioned earlier, but liberal people say it's very good, and conservative people say it's good but not what they want to eat (laughs). However, I have had many people say that it is the best food they have ever had (laughs).
