Chilly Hamburger Bistro is now open at the Mustard Hotel. Try the Chillmatic.

MUSTARD HOTEL has two facilities in Shibuya and Shimokitazawa . A new restaurant, Chillmatic, has opened on the first floor of the Shibuya location.

This time, the restaurant features a burger & bistro style, and the menu was created by Chef Daiji Shiota, who is from a French background and learned the essence of aged meat under Michelin-starred Chef Fumio Yonezawa in New York and Tokyo.

The name of the restaurant is a coined word that is a combination of "chill," meaning relaxing, and "illumatic," from the meaning of the best of bad. The cozy space and service are probably the best of all worlds, along with the delicious food and drinks.

Chillmatic Burger ¥1,800

The signature dish, which can be called a specialty, is the "Chillmatic Burger" that bears the restaurant's name. The burger is a mouth-watering, coarsely ground meat that, when chewed, releases a sweet, nutty aroma of aged meat from the back of the throat and into the nostrils.

The beef belly is slowly marinated in salt for four days, cooked until tender, and then smoked for six days to create a thick slice of pastrami with a tender, flaky texture that soaks up the flavor in the crispy bread. Mmmm, this looks delicious.

, the a la carte menu is bistro-style, incorporating spices and herbs. The concept is to incorporate international food culture into Tokyo style, such as baked guacamole (¥900) and edamame hummus (¥750), and not to overstep the mark, such as Ufumayo (¥500).

In addition, the hotel is now offering French toast for breakfast. The menu offers a choice of maple & butter (¥700), roasted banana & cocoa sauce (¥1,200), kale cream cheese blueberry vinaigrette (¥1,300), bacon fried eggs with newly developed homemade mustard sauce (¥1 1,200), and more to choose from.
