We live in an age of globalization and diversity. While there are more and more restaurants with various ideas, the organic restaurant "Kitchen Watarigarasu" in Ebisu has opened a gluten-free bakery "ORGANIC JUNKIE" as a new challenge.
Since its opening in 2009, Kitchen Watarigarasu has focused on organic vegetables and rice, homemade dressings and sauces, no additives, chemical seasonings, or frozen foods, domestic meat, and seafood directly from the port.
Its new business model, Organic Junkie, is a gluten-free bakery born from the desire to preserve Japan's beautiful rice fields and the abundant nature they produce. By allowing more people to enjoy bread made with domestically produced organic rice flour, they hope to preserve the rice fields that make up half of Japan's rice paddies and their natural beauty.
The breads that can be enjoyed at the store are breads that have been improved over the years at Kitchen Watarigarasu. They are made from rice flour, minor grains, and beans that are close to the original Japanese organic seeds, and fermented with natural yeast by adding filtered water that preserves minerals and mineral-rich salt condensed from the clear seawater of Awakuni Island.
The menu includes lightly textured gluten-free breads, sandwiches, and sweets. The gourmet sandwiches, which change daily, are made with fresh organic ingredients straight from small farms, with a dash of spice and herbs to add some junk-food juiciness.

A wide variety of hard-type breads are also available. The lineup includes "corn" kneaded with oregano and other ingredients, "multigrain," a rice and buckwheat flour-based dough blended with various nuts and seeds, "chickpea," a blend of the herb fennegrik, and "chocolate and buckwheat," a mixture of Belgian cacao powder and buckwheat flour. Gourmet sandwiches change daily using seasonal ingredients and are available from 11:00 a.m. daily. The "Tandoori Fish" with natural sea bream accented with lightly grilled eggplant and homemade pickles, the "Teriyaki Miso Chicken and Heirloom Egg" with a satisfying tartar sauce made with miso-marinated jidori chicken and heirloom egg, the "Cajun Mackerel" with grilled mackerel spiced with Cajun spices, etc. The menu also includes the rare "Cajun Mackerel," a grilled mackerel with Cajun spices.
Spices, rice, beans, and dried fruits used in the store are sold by weight, as well as glasses and plates. A selection of wines is also available, and standby drinks include decaf hand-drip coffee (¥580), green tea latte (¥720), Japanese black tea (¥550), and an original drink, organic nut latte (¥750).
