It is often said that people in Japan like to wait in line and people overseas don't like to wait in line, but there is a bagel shop in the U.S. where people are always waiting in line. The name of the shop is Apollo Bagels.
Founded in New York in 2020, the first store opened in 2023, and since then it has attracted attention as a popular store with long lines of customers before it opens, and is now so popular that it has seven stores in the city. The store will hold its first pop-up in Japan.
The most distinctive feature of Apollo Bagel, which will be brought to Japan by DEAN & DELUCA, is that it is made from sourdough. 24 hours after fermentation, each bagel is formed by hand, boiled every morning using traditional methods, and baked in the oven.
The result is a light texture that is both crispy and chunky. The fact that the bagel is cut in half also helps. It looks beautiful and feels somewhat lighter in the mouth. I grew up in Manhattan, and as a teenager I would often stop by the DEAN & DELUCA main store on Prince Street while skateboarding through Soho. Sometimes I would go in for soup or a sandwich, and sometimes the staff at the counter, who had become familiar with my face, would quietly feed me on days when I didn't have any money.
Eventually, curiosity led to cooking, and cooking led to travel. The Japan I encountered along the way had a profound impact on my approach to work. The attention to detail, the concern for detail, and the serenity in the midst of a busy city.
In 2023 we launched Apollo Bagels. We feel that bagels, the iconic food of New York City, deserve to be made with the same care and respect that Tokyo artisans pour into their daily bread.
